Tailgating Recipes for the Big Green Egg Minimax

Tailgating season has begun and the Big Green Egg Minimax is the perfect game day accessory. This small but mighty grill is constructed from the same ultra high-quality ceramics as larger Big Green Egg grills, but with a sturdy, easy-to-grip carrier and compact size.

Despite its small size, the Minimax can easily handle a 12-pound turkey, 4 burgers, 2 steaks or a rack of ribs. And during a tailgate party it’s perfect for sharable  snacks like wings and sliders.

Jamaican Jerk Chicken Wings

Ingredients

  • 6 scallions, greens part only
  • 1 tablespoon finely minced fresh ginger
  • 1 teaspoon ground allspice
  • 1 tablespoon fresh thyme
  • 1 tablespoon dark brown sugar
  • 1⁄2 cup fresh orange juice
  • 1⁄4 cup white vinegar
  • 1⁄4 cup soy sauce
  • 1⁄2 cup olive oil

Instructions

Set the EGG for indirect cooking at 350°F/177°C.

Puree all ingredients in a blender until smooth. Pour over chicken wings. Marinate for about 24 hours. Grill wings until done. Serve hot!

Italian Sausage Sliders

Take all the greatness of the humble slider and add an Italian sausage kick with Johnsonville! This quick and easy recipe boosts the taste of the traditional burger because of a special herb and spice mix that’s already blending into the sausage.

Ingredients

  • 2 pounds Johnsonville All Natural Ground Italian Sausage or Links (remove from casing)
  • 1 pound ground beef
  • 16 small slider buns or mini sandwich rolls
  • Condiments of your choice

Instructions

Set the EGG to direct cooking at 400°F/204°C.

In a large bowl, combine sausage and beef. Using your hands, blend the two meats together and form into one large ball. Use a spoon or a small measuring cup to gather up about a 3 ounce ball and press into patties … with the Big Green Egg Mini Burger Basket you can form and cook 12 Mini Burgers at once!

Place the Mini Burger Basket or individual sliders directly on the cooking grid. Cook for about 3 minutes then flip and continue cooking for another 3 minutes. The internal temperature should be 160°F/71°C.

Slice the buns and top the sliders with your favorite condiments.

Makes 16 sliders.
